It was yummy. But cold... I better learn to take a quick picture while I'm eating, as the food is "posing", it's also getting cold. No quotation marks needed this time.
I decided to get adventurous and cook something I had never cooked before: POLENTA. It was delicious. I had cooked polenta pizza and soft polenta before, but baked, plain, just like this, was simply too good. The recipe I used was taken from this website I discovered today: http://www.eatingcleveland.com/2008/11/17/easy-polenta-recipe/. They have lots of good recipes. This recipe I followed called for parmesan cheese but I gave it a twist by using pepper jack and cheddar cheeses. I love Cabot cheeses (I started buying it because they use non-animal rennet), and they have several spicy ones. I also made REVUELTO DE CHAMPIÑONES, it sounds kind of funny in English: scrambled eggs with mushrooms. Not breakfast food in Spain, though. Good enough for dinner. And garlicky. Yummy. And to finish up I took advantage of the oven being on and I made BROCCOLI BITES (nugget-looking pieces filled with cheese and broccoli, by the brand Veggie Patch).
My adventure continues tonight: I'm making yogurt for my first time. Second try but, hopefully, it will be the first time it thickens. Wish me luck!
Yum- I love broccoli, mushrooms, and polenta; this is the perfect meal for me! I'm excited to try my polenta with pepper jack and cheddar. I'm sure it'd be delicious with Cabot Garlic and Herb, too! Thank you from the farm families who own Cabot for your support :)
